
Holiday Sugar Cookie Recipe
🎄 Christmas Sugar Cookies 🎄
Gluten-Free & Refined-Sugar-Free
Ingredients:
1 1/2 cups almond flour (or gluten-free all-purpose flour)
1/2 cup coconut flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup coconut oil, melted (or grass-fed butter for non-vegan)
1/4 cup maple syrup (or honey, for a non-vegan option)
1 large egg (or flax egg for vegan: 1 tablespoon ground flax + 3 tablespoons water, let sit for 5 minutes)
Optional: 1/4 teaspoon almond extract (for extra flavor)
Optional: 1/4 cup coconut sugar or stevia for a lightly sweetened glaze
Instructions:
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix dry ingredients: In a large bowl, combine almond flour, coconut flour, baking soda, and salt.
Mix wet ingredients: In a separate bowl, whisk together the melted coconut oil (or butter), maple syrup, egg (or flax egg), vanilla extract, and almond extract if using.
Combine wet and dry ingredients: Add the wet ingredients to the dry ingredients and mix until fully incorporated. The dough should be slightly sticky but firm.
Chill the dough: For best results, chill the dough in the fridge for 15–30 minutes. This helps the cookies hold their shape while baking.
Roll out and cut shapes: After chilling, roll the dough between two sheets of parchment paper to about 1/4-inch thickness. Use a cookie cutter to cut into fun holiday shapes (like stars, trees, or circles).
Bake: Place the cookies on the prepared baking sheet. Bake for 8–10 minutes, or until the edges are lightly golden. Be careful not to overbake, as coconut flour can make the cookies dry quickly.
Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Optional Healthy Glaze:
Mix together 1 tablespoon of maple syrup with 1/2 teaspoon of coconut oil. For a slightly sweeter glaze, you can add a pinch of coconut sugar or powdered stevia to taste.
Brush a thin layer of the glaze over the cooled cookies.
Tips:
Storage: These cookies can be stored in an airtight container at room temperature for up to a week. They also freeze well.
Decorating: You can decorate with natural sprinkles or a light dusting of powdered coconut sugar for a festive touch!
Texture: The cookies will be slightly crumbly but soft. Almond flour helps create a tender texture, while coconut flour adds some structure.
